Sugar Cookie Dessert Pizza

For the Cookie:

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 sticks unsalted butter room temperature
  • 1 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 4 4.4 ounce containers Icelandic Provisions Krímí Skyr, divided

For the Topping:

  • 1 mango thinly sliced
  • 2 kiwis peeled and sliced
  • 1/2 cup pomegranate arils
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • 1/2 cup blackberries


  • In a large bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a stand mixer, beat butter and sugar until light and fluffy. Add egg, mix well. Add vanilla and 2 tablespoons of Icelandic Provisions Krímí Skyr, mix until combined.
  • Add flour mixture, mix until combined. Divide the dough in half, shape into discs, wrap, and chill for 30 minutes.
  • Preheat oven to 350˚F. Roll out one disc to 1/4 inch thickness, cut into a 10-inch circle, and bake for 12-15 minutes.
  • Repeat or freeze the remaining dough for later.
  • Top each cookie pizza with Icelandic Provisions Krímí Skyr, decorate with fruit, and serve immediately. Enjoy your easy and delicious homemade treat!
