Sugar Cookie Dessert Pizza
Ingredients
For the Cookie:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 sticks unsalted butter room temperature
- 1 3/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla
- 4 4.4 ounce containers Icelandic Provisions Krímí Skyr, divided
For the Topping:
- 1 mango thinly sliced
- 2 kiwis peeled and sliced
- 1/2 cup pomegranate arils
- 1/2 cup raspberries
- 1/2 cup blueberries
- 1/2 cup blackberries
Instructions
- In a large bowl, whisk together flour, baking powder, and salt. Set aside.
- In a stand mixer, beat butter and sugar until light and fluffy. Add egg, mix well. Add vanilla and 2 tablespoons of Icelandic Provisions Krímí Skyr, mix until combined.
- Add flour mixture, mix until combined. Divide the dough in half, shape into discs, wrap, and chill for 30 minutes.
- Preheat oven to 350˚F. Roll out one disc to 1/4 inch thickness, cut into a 10-inch circle, and bake for 12-15 minutes.
- Repeat or freeze the remaining dough for later.
- Top each cookie pizza with Icelandic Provisions Krímí Skyr, decorate with fruit, and serve immediately. Enjoy your easy and delicious homemade treat!
